Baldwin Hackett & Meeks, Inc. is honored to share with you the winning recipe from our 15th annual BHMI Favorite Seasonal Treat Contest. Each year BHMI holds a company-wide contest to find the recipe that will prove worthy as BHMI’s corporate holiday gift.
This year’s BHMI Best seal of approval goes to Doug Edwards, Senior Technical Writer, for his Chocolate Mint Sugar Cookies. Doug and his wife, Janet, have been baking and sharing these cookies with friends and family for over 30 years! They have stood the test of time and now they have the BHMI Best seal of approval. You can’t go wrong this holiday season by sharing these festive, seasonal mint cookies.
Doug has been with BHMI for 2 years and writes reference and user documentation for BHMI’s Concourse Financial Software Suite™ of products. When Doug isn’t composing technical prose, you might find him enjoying a cup of coffee with his wife on one of their weekly Saturday morning coffee dates or cheering on the University of Nebraska – Lincoln Husker volleyball team. Doug is also looking forward to celebrating a 40th wedding anniversary with his wife, Janet, this coming April.

Doug’s Chocolate Mint Sugar Cookies
Ingredients
2 ½ cups all-purpose flour
1 ½ tsp. baking powder
¾ tsp. salt
1 ¼ cups sugar, divided
¾ cup vegetable oil
2 eggs
1 tsp. vanilla extract
1 pkg (10 oz. or 1 ½ cups) Nestle Toll House Winter Dark Chocolate & Mint Morsels
Directions
Preheat oven to 350 degrees
In a small bowl, combine flour, baking powder, and salt; set aside
In a large bowl, combine 1 cup of sugar and the vegetable oil; mix well
Beat in eggs and vanilla extract
Gradually add the flour mixture
Stir in the Nestle Toll House Winter Dark Chocolate & Mint Morsels
Chill dough. Shape into balls, roll in remaining ¼ cup of sugar and bake on ungreased cookie sheet for approximately 10 minutes. Makes about 3 dozen cookies.
